                  Sustainable Ingredients

                  Chef Aldo's policy is to promote sustainable fishery and to support suppliers of organically grown foods.

                  He also grows many of his own vegetables and herbs on the property, without the use of chemicals and pesticides. The food is produced naturally on site which means produce is used when needed and in season. We also use fair trade and local goods wherever possible.

                  The mild Sunshine Coast weather is perfect for growing vegetables. Chef Aldo grows tomatoes, garlic, zucchini, several types of squash, different salad leaves and fresh herbs such as basil - anything and everything that is in season.

                  The resort's extensive aviary houses chickens, pheasants, turkeys, quail, chuckars, peacocks and more! They provide us with all the fresh, free-range eggs that we can eat.
